Tequila Tapatio Blanco 110
  • 100% Estate grown Blue Agave
  • The Agave are hand selected by Jimadores and delivered fresh to the distillery where they are hand cut and placed in the oven.
  • The Blue Agave are slowly baked for four days to transform the raw material into sweet fructose sugar. Once baked, the Blue Agaves are crushed and pressed in a modified sugar cane mill to extract the sweet agave juice (“Mosto”) which is then ready for fermentation.
  • A selected fraction of freshly made “Mosto” is pumped into small wood fermenters to slowly ferment using a special in-house 75 year old yeast culture. Once the “Mosto” ferments into dry “Mosto Muerto” it is ready to be distilled.
  • The first distillation is run through a 3,500 liter Stainless Steel Still, then the “Ordinario” is distilled in small (90-250 gallon) Copper Alambiques Tequilano Pot Stills.
  • Barely filtered to preserve mouth feel, texture and viscosity of the estate grown Blue Agave.

A few new Items

E.H. Taylor, Jr. Single Barrel  100pf
Colonel Edmund Haynes Taylor, Jr. is widely considered one of the founding fathers of the bourbon industry, fighting for the Bottled-in-Bond Act of 1897, nearly three decades after he purchased what is now called Buffalo Trace Distillery. During his time, Taylor implemented several innovative methods still used today, including climate controlled aging warehouses. E.H. Taylor, Jr. Single Barrel is aged exclusively in Warehouse C, which was built by Taylor in 1881 and proven to be an excellent aging warehouse. Each barrel is hand-picked and Bottled in Bond at 100 proof to honor its namesake.

TASTING NOTES: The aroma carries lightly toasted oak, with dried figs and butterscotch. One sip brings flavors of sweetness balanced with tobacco and dark spices. The finish is just long enough to prepare the palette for another sip. The bottle itself is a likeness to Colonel Taylor's original design used over a century ago.   $74.99  750ml.

Dancing Pines Bourbon Whiskey
This bourbon hails from a small craft distillery in Loveland Colorado – the brainchild of a wife-husband-husband’s father combo! Dancing Pines is one of many new craft distilleries that have been popping up across America that have embraced the modern American whiskey renaissance with it’s bourbon whiskey. Yes, Dancing Pines does produce a bourbon. We like to point that out as many people think that bourbon can only come from Kentucky. Bourbon can come from anywhere in the United States but only Kentucky bourbon can come from Kentucky.
Appearance: clear with a medium minus golden to tawny color and thick legs

New Rums

Phraya Rum from Thailand
Phraya is distilled from sugar from Nakhon Pathom, uwsing the soft, natural waters of the Ta Chin River; it is then matured 7 to 12 years in freshly ‘fired’ oak in a lush, tropical environment; only after all of this are barrels selected to be included in the final blend. Phraya reveals aromas of nutmeg, caramelized honey, clove, Brazil nuts and raisins that are so very tantalizing. The flavors start out at the aromas, increasing to add baked coconut, apricot, butterscotch, grilled pineapple and overripe citrus. The finish is gratifying and silken, showing dainty redolence and pleasant spice that fades elegantly.
